Kefir probiotic drink intervention in citadel las piñas Ecuado
Abstract
Kefir is a fermented probiotic drink from the symbiotic bioactivity of microorganisms recognized as safe. The action that this drink provides is through the diversity of nutritional, anti-inflammatory, gastrointestinal, antimicrobial benefits, among others. In Ecuador, there is a few use of biotechnological products with added values. The objective of this study was to evaluate the probiotic drink in older adults from the Ciudadela Las Piñas, in the city of Milagro. There were 126 older adults who helped with the sensory activity of the water kefir drink, data that allowed us to observe the impact of acceptance, these organoleptic parameters had 3% with a maximum peak of 4%, considering it as very good within the ranges of consumption, the best kefir intake treatment was 2 times a week with a maximum acceptance range of 4.5%. In the improvement of digestion and regulation of constipation problems of the participants, it showed a better state in digestion from week 2 with 2.5%, until reaching week 6 with results of 9%, considering the maximum peak 10 .% in the balance of the intestinal microbiota and improvements in intestinal health
